SWEET THAI COLESLAW

RECIPE ALLERGENS:
TOASTED SESAME – SESAME SEEDS
ANCHOVY FILLETS – FISH
GREEK YOGHURT - MILK

Ingredients: 
  • 200ml Uncle Ben’s Sweet Thai Chilli Sauce
  • ½ Red cabbage thinly sliced
  • ½ White cabbage thinly sliced
  • 8 Spring onions sliced
  • 4 Large carrots grated
  • ½ Bunch of fresh mint
  • 2 Handfuls of toasted sesame and sunflower seeds
  • 2 Handfuls of kale shoots or curry lettuce
  • 4 Anchovy fillets chopped
  • 3 Cloves of garlic crushed
  • 600ml of Greek yoghurt
  • 2 tbsp. White wine vinegar
Preparation method: 

1.    Mix the sliced cabbages, onions, carrots and mint together in a bowl
2.    Mix the Uncle Ben’s Thai chilli sauce with the garlic, vinegar and anchovies, then stir in the yoghurt
3.    Fold the yoghurt mix into the vegetables
4.    Add the seeds and stir before serving with the shots of kale or curry lettuce
