Sweet Chilli Quorn with Mango Rice

Ingredients

Serves 15 Ingredients 1½lbs/675g brown rice 1 medium mango, diced 1lb/450g Quorn pieces 2 green chillies, deseeded and chopped 2 red chillies, deseeded and chopped ½ clove garlic, crushed 6oz/175g mung beans 6oz/175g aduki beans sweet chilli sauce

Preparation method

Method 1. Soak beans overnight in cold water. 2. Boil beans in separate pans for approximately 30 minutes or until soft. 3. Boil rice for approximately 15 minutes, adding half the diced mango half way through cooking. 4. Put crushed garlic, chopped chillies, remaining diced mango and Quorn pieces into a large pan. Add a small amount of water and simmer gently until tender. 5. Drain and rinse rice and mango. Put into serving dish. 6. Drain and rinse mung beans. Add to chilli and garlic mix. 7. Add aduki beans and stock to the mix. 8. Gently combine all ingredients over a low heat. 9. Add sweet chilli sauce to desired taste. 10. Serve with mango rice.
