Quorn Cobbler

Ingredients

Serves 10 Ingredients 5ml /1tsp oil 100g/4oz celery 150g/5oz carrot, diced 150g/5oz onion, diced 200g/8oz peppers, chopped 500g/1lb 2oz tinned tomatoes, chopped 450g/1lb Quorn pieces Topping 200g/7oz plain flour 200g/7oz wholemeal flour 35g/1½oz baking powder 100g/4oz margarine 175ml/6 fl oz semi-skimmed milk

Preparation method

Method 1. Heat oil and sauté vegetables. 2. Add chopped tinned tomatoes and Quorn pieces, cook through until just tender. 3. Set mixture aside in a dish. 4. Make topping by rubbing the margarine into the flours and baking powder. 5. Mix in the milk to make a soft dough. 6. Divide dough into 10 and put on top of Quorn mixture. 7. Bake at 190°c/370°f/Gas 5 for 20-25 minutes. 8. Serve with boiled new potatoes.
