Ingredients

Serves 10 Ingredients 10ml/2tsp oil 250g/9oz onion, chopped 250g/9oz red pepper, chopped 200g/7oz courgette, chopped 275g/10oz red kidney beans, drained weight 500g/1lb 2oz tinned tomatoes, chopped 400g/14oz Quorn pieces 250g/9oz tomato puree chilli powder, to taste fresh parsley, chopped

Preparation method

Method 1. Heat oil and sauté onions, courgettes and peppers until just soft. 2. Add kidney beans, chopped tinned tomatoes and Quorn pieces. 3. Add chilli powder to taste and cook through. 4. Add tomato puree and chopped parsley. 5. Garnish with fresh parsley and serve with rice.
