Pork Cutlets, Beer and Mustard

Ingredients 10x100g Larder trimmed pork cutlets 2g Cracked black pepper 40mls Olive oil 600mls Brown Ale/Bitter 5g Garlic cloves puree 300mls Stock 25g Butter 15g English Mustard 40mls Worcestershire Sauce 300g Straw potatoes

Preparation method

Method Sprinkle cutlets with pepper. Place a large sauté pan over medium heat. Pour in olive oil and heat until hot. Place pork cutlets into pan and cook on both sides until lightly browned. Reduce heat to medium. Add ale and garlic, cook until the ale has reduced by two thirds. Add the stock and turn heat to low. Cover and simmer for 10 minutes turning cutlets once, until meat is tender, remove and serve, pour over the cooking sauce. Serve with straw potatoes and grilled tomatoes.
