Two thirds would pay more for fully traceable, high quality meat when eating out

More than two thirds of people will pay more for a dish out of home if the meat used is high quality and fully traceable to its source, according to a study from catering butchers Danish Crown.

The study also showed that 84% of people think taste and quality is most important when it comes to meat, followed by traceability and provenance.

Allen Hansen, foodservice director at Danish Crown, said: “Demand for new and more premium meat dishes in the UK has been given a real boost thanks to Britain’s love of gastro-dining and food trends, like barbecue and street food, which have catapulted meats like pulled pork and aged steaks onto menus.

“Our survey reveals taste and quality are the two most important factors for consumers when eating meat out-of-home and two thirds of them say it is important the meat served in restaurants is from an established and accredited butcher.”

The study from the butchers, based in Smithfield, London, also revealed that consumers wanted to broaden their tastes and be more experimental by trying new meats.
