Schwartz for Chef flavour challenge for chefs at Hospitality 2011

Herbs and spices specialist McCormick Foods is once again sponsoring the Flavour Pairing Challenge under its Schwartz for Chef brand at Hospitality 2011, which is being held at the NEC Birmingham from January 24-26.
Teams of two chefs will have just 45 minutes to prepare, cook and present a two course meal for two in the Live Theatre, using one pair of flavours in each dish from the following: garlic and pink grapefruit; chives and coconut; oregano and butter beans; ground cinnamon and hazelnut; thyme and anchovy; turmeric and tomato; ground nutmeg and honey; and black pepper and goat's cheese. The menu must consist of a starter and main course or a main course and dessert. McCormick says the winner will receive a "money can't buy" day cooking with celebrated Indian chef Cyrus Todiwala at his Café Spice Namasté restaurant. The one-to-one session with Todiwala, who is renowned for his innovative and exciting use of spices, will also include lunch with wine.
