Abstract
Entries are now open for rice specialist, Riso Gallo’s 2019 Young Risotto Chef of the Year competition until 30 September.

Calling on “budding” chefs aged between 18 and 25, entrants must submit a recipe and image of their risotto, and explain why they believe winning would enhance their catering career.

The top five will then go head-to-head in a live cook-off on 21 January 2019 at Westminster College (London), where they will be judged by the panel comprising: Danilo Cortellini, former Professional MasterChef finalist; Davide Degiovanni, head chef at Gordon Ramsay’s Union Street Café; and Paul Gayler, author and former executive chef at The Lanesborough.

2018 winner, Dervis Mustafa from London Westminster Kingsway College, who took home the title after serving a Jerusalem artichoke and wild mushroom risotto, commented: “It was great fun to take part in this competition and I learnt so much.

“It was great to get feedback from such prestigious judges, and I am really looking forward to my prize of cooking with Michelin starred chefs, Fabio Pisani and Alessandro Negrini, in Milan.

“It will be an honour and an amazing experience.”

This year’s title holder will receive an all-expenses paid, three-day work experience at Angela Hartnett’s Michelin starred Italian restaurant, Murano (Mayfair); while the runner-up will win a three-day cooking experience with Danilo Cortellini at The Italian Embassy in London, for the planning and execution of a gala dinner.
