New executive chef for Charlton House

Abstract
The executive head chef at BDO Stoy Hayward on Baker Street, London, is to join Charlton Houses's elite, executive chef team from 1 April.
Mo Vaitusi will join Mike Brown, Dean Drewe and David Bridge under the directorship of the Michelin-starred chef, David Cavalier, food director of Charlton House. His main focus will be on Charlton House's portfolio of London City fine dining contracts. Vaitusi, who is originally from New Zealand, joined Charlton House as head chef in 2006 after an international career across three continents; Australia, America and the UK, and including renowned establishments such as Claridges, FIN Restaurant in Sydney and Bistro 301 in San Francisco. Commenting on the new appointment, David Cavalier, food director of Charlton House, said: "In his new role Mo brings to Charlton House a wealth of international experience, which coupled with his enthusiasm for food, results in the highest culinary craft skills. "He has vast knowledge of Australasian and American cuisines and so I'm sure that these influences will be reflected in the way he approaches future tasks that are set before him. He leaves his present position having a well trained a brigade of chefs who respect him for his leadership qualities and his ability to train." Caroline fry, joint managing director of Charlton House, said:" As a successful food business we will always continue to invest in our executive chefs who play such a key part in developing our food service and our chefs across the business."
