Abstract
As part of catering company Kudos’s commitment to “ethics and environmental needs,” it has started growing its own produce at Penshurst Place and Gardens, which it uses in recipes served in on-site venues.

From runner beans to kale, pak choi, red onions and garlic, the group also tends to a range of herbs (chives, basil, fennel, rosemary, thyme) to ensure they are ready to-use in both the Porcupine Pantry and Garden Restaurant.

The move forms part of Kudos’s ‘The Good Life’ project, which already sees its chefs rear game on-site at Penshurst Place as well as apples from the apple orchard, while all other ingredients are sourced from local suppliers including Hall Place Farm, Speldhurst Sausages and Curious Brew.

Food director David Cavalier said; "Growing our own produce is something (Kudos) has wanted to do for some time, so it's exciting that we're finally able to put this into motion during what will be a significant year for KUDOS."
