IFST to examine food safety in catering industry

The Institute of Food Science Technology (IFST) will host an interactive evening on 18 September that aims to examine food safety challenges within the catering industry.

The event entitled ‘Challenges in the Catering Industry; Translating Science into Practical Solutions’ will feature a presentation from Dr Lisa Ackerley, a Chartered Environmental Health Practitioner with over 30 years' experience.

It will focus on the challenges, myths and legends relating to allergens, burgers and risky foods, food waste and disinfection residues and chlorine.

Ackerley said: “There is so much useful research and information available but it doesn’t always get translated so people understand what it means and more importantly what can be done as a consequence to improve public health.”

Ackerley run a hygienic consultancy business, Hygiene Audit Systems, which was acquired by Acoura (now part of Lloyds Register), for 28 years, and continues to work in the commercial food safety arena as a strategic adviser to the Acoura board as well as working as an expert witness for food law and practice.
