Abstract
Contract caterer Elior UK has signed a 10-year deal with the University of Sunderland, which will see it ‘transform facilities’ for the 12,000 students it will be catering for.

Announced this week, the tender estimates contract turnover at £2.3 million a year - equating to £23m over the life of the contract.

As such, Elior will be responsible for all food and drink outlets across the university’s nine campuses, which serve over 12,000 students.

It will also make ‘substantial investment to transform facilities,’ including ‘several’ newly built coffee shops (including a Starbucks and Elior’s own brand coffee shops) and new food courts for each of the two campuses.

Business development director for education at Elior UK, Connor Hickman, commented: “From artisan coffee shops to global flavours, the offer has been designed to appeal to the tastes of students today. To help future proof the offer, we’ve made all the new spaces as multifunctional as possible. But equally, we want to respect the heritage of the University. We’ve been careful not to make changes for the sake of it, and we’ve kept lots of the original outlet names.”
