Abstract
Contract caterer Restaurant Associates (RA) has announced a new partnership with Slow Food UK, one of a number of new initiatives unveiled by the Compass division in what it is called a “brand refresh” for the business that also includes the launch of a dedicated website.

As part of its partnership with Slow Food UK, RA culinary director Jeremy Ford and his team will be introducing dishes created to showcase some of Britain’s ‘Forgotten Foods’ to help customers rediscover British culinary traditions.

The initiative supports Slow Food UK’s Ark of Taste campaign and each month a new ‘Forgotten Foods’ dish will be added to the menu at RA restaurants within its corporate catering contracts.

The first dishes include Grimsby Smoked Haddock, Westcombe Dairy Cheddar and Gloucester Old Spot Pig.

“When it comes to foods produced on a smaller scale, it’s as simple as eat it or lose it – and we’ve already lost an awful lot,” said Catherine Gazzoli, chief executive of Slow Food UK.

“Restaurant Associates plays a very important role in influencing food choice, so we are pleased that their new menus will help aid us in our ambitions for promoting artisan and tradition-rich foods to diners.”
Ford added: “Our focus is on creating brilliant food with the best ingredients and the work that Slow Food UK does is really important in ensuring that some of our greatest foods do not become forgotten treasures.”

RA managing director Andy Harris said: “As well as this exciting new partnership with Slow Food UK, we are launching a number of fantastic new initiatives including a specialist coffee concept, a bespoke deli offer, and our own recipe book; 47.

“e are really focused on driving forward innovation within in our industry while maintaining our commitment to creating inspirational food and exceptional service and I believe Restaurant Associates delivers just that.”
