Brakes Scotland launches third brochure ‘supporting local suppliers’

Foodservice provider, Brakes Scotland, has launched its third and new for this year brochure, backed by chef Gary Maclean and featuring produce from over 100 local Scottish suppliers.

From Scotch beef to artisan cheese, Eteaket tea and sorbet, it also includes national favourites such as wild venison, haggis, an “extensive” dairy range and Scottish craft beers, as Brakes continues to “support businesses as they develop outstanding Scottish menus.”

 

With all beef supplied from quality assured farms by Scottish Gourmet, it is being sold under the company’s new brand, ‘Caledonia Farms,’ which “promotes high quality, fresh, Scottish products from farms throughout Scotland.”

 

Brakes Scotland operations director, John McLintock, explained: “This is our third version of the brochure and each year our range gets bigger and better. The focus this year and for next is firmly on fresh, quality Scottish produce and we are delighted to be promoting the best of the best, Scotch beef PGI in conjunction with Quality Meat Scotland (QMS).”

 

The brochure also includes recipes from Masterchef: The Professionals winner, Gary Maclean, using ingredients that he likes to cook with such as Scotch ribeye, a pan seared fillet of salmon and strawberry sundae. He said: “I’ve been a Brakes customer for over 20 years and I love that Brakes is working with small/medium artisan producers, offering a fantastic range of local produce to its already extensive range.

 

“The direction Brakes Scotland is taking is really exciting and I urge chefs to buy the best and let the food do the talking.”
