ISS crowns Kamila Kuchnio its chef of the Year

Kamila Kuchnio, a civilian chef at RAF Marham, has been crowned ISS Chef of the Year 2017.

Kuchnio emerged victorious from the final two rounds of the catering firm’s annual competition held at the Unilever’s Chefmanship Centre in Leatherhead earlier this month.

The semi-final and final featured 11 representatives from ISS Defence, Education, Healthcare and Food & Hospitality.

Miles Ludlow (RAF Wittering), John Grantham and Bart Waskiewicz (both Food & Hospitality) contested the final along with Kuchnio.

The four were allowed 20 minutes to prepare their stations followed by 90 minutes to prepare a two-course menu.

Kuchnio won over the judges with her main course of pan-seared sea bass, served on a bed of aubergine with mushrooms, green beans and tomatoes, and her dessert of white chocolate risotto, served with caramelised chocolate, apricots, blueberry coulis and ginger crumb.

As a prize, she won a Michelin starred dinner for two, overnight stay and breakfast at Le Manoir aux Quat’ Saisons in Oxfordshire, along with a personalised trophy.

She also won a five-course dinner tasting menu for two at Gordon Ramsay's Maze after impressing with her hygiene standards.

Ludlow, who finished runner-up, won an eight course Michelin taster menu for two at The Ametsa, Belgravia, while the other finalists were awarded a spa treatment and afternoon tea for two.
